Left Lane Featured at Sierra Mar Resturant, Big Sur

Sierra Mar is home to one of California's largest wine collections – and it's growing. The cellar now features more selections (2700), more bottles (about 14,000), more regions, more diversity and more unique producers.
Wine Director Dominique DaCruz tastes a lot of wine (just one of the requirements of his job!). Here are five of his favorite cabs from the wine list. These pair perfectly with winter comfort food, flavorful meats and game that are enhanced by the richness and body of the Cabernet Sauvignon grape.

Only two barrels produced and a very first release. Blended with Merlot, Cabernet Franc and Malbec, the wine shows power, intensity and concentrated aromatics. Youthful, but holding great harmony. Very well selected sourcing and attention to detail are combined with an exceptional vintage.

MAPSON, ROGUE, NAPA VALLEY 2007
Only one barrel produced! What a great story this is. While making a limited selection of primarily Cabernet Sauvignon, the “rogue barrel” of Merlot kept screaming “don’t blend me”! So, with a nod towards the Right Bank of Bordeaux, the 25 case production was bottled and we are the only people to have it on the planet. And, to prove our affection for this wine isn’t based solely on exclusivity, we held a 22 wine blind tasting this week and this wine was in the top 3 for all 6 people tasting……….blind—the only real way to taste without preconceived notions. 6 bottle limit per person, please.

Left Lane 2007
First of all, congrats on making a world class wine. My process in evaluating a red wine is pour an ounce and a half of wine and make some notes - once an hour for 3 hours. Then I cork the bottle and let it sit over night and evaluate again. I am normally very critical and would like say I found some aspect of the tasting experience that was lacking - but I can't.

A beautiful bouquet, releasing layer after layer of fruit, spice and oak. A wonderful balance of flavors in the mouth - rich but never heavy - followed by a long exquisite finish. Best of all I ran out of wine before it finished revealing all of its secrets.

The Rogue 2007
WOW! We finally drank your bottle of wine tonight and LOVED it. We shared it at dinner with a couple that we know who have been to France a few times and are way into wine and they raved about it. I thought it was terrific and I got a pretty good buzz too. Bravissimo!!
